Konro grill

The special Yakitori BBQ

The Konro grill, as the yakitori grill is called in Japan, was developed in the 18th century. Initially, not yet as a grill, but as a heating appliance. Some time later, people discovered that the grills could not only serve as heaters, but that you could also perfectly prepare different foods on them. Thus, the Yakitori BBQ was born. The grill is made of diatomaceous earth, a material that is very resistant to extreme heat and holds it extremely well. Because the grates of the grill are fixed just above the charcoal, the juice of the meat drips down to the grill and quickly evaporates. The vapour then soaks into the meat and this gives off a delicious smoky flavour.

Binchotan charcoal

When you start using the Yakitori BBQ, you need the world's most special type of charcoal: Binchotan charcoal. This special charcoal is made from the Japanese Ubame oak. Binchotan is only produced in southwest Japan. Locals there make the charcoal by hand in large clay kilns. The moisture is then very slowly drawn out of the wood, making it very hard. This allows this solid charcoal to burn much longer than any other charcoal. This also makes it a bit more expensive. That is why we offer an affordable alternative, namely the white BestCharcoal Binchotan. This is a charcoal from Indonesia and this charcoal has practically the same properties as the Japanese variety.
