The uniqueness of Japanese barbecue
In the 18th century, this particular Japanese BBQ was developed. But it was not directly used as a grill. Initially, the Konro grill was used as a heating appliance. Over time, people found out that these grills were not only ideal as heaters, but that you could also perfectly prepare Yakitori and other foods on them. This Japanese barbecue is made from diatomaceous earth. Diatomaceous earth has the natural ability to spread heat easily and retain it extremely well. When you eat meat from a Japanese BBQ, you will notice that it has a fantastic smoky flavour. This is because the meat is only a few centimetres above the charcoal during grilling. As a result, the juice of the meat drips down to the grill and evaporates very quickly. This vapour soaks into the food and this gives that delicious authentic smoke flavour you are looking for.
Binchotan charcoal on Japanese BBQ
When you start using the Japanese Konro grill, it is wise to Binchotan charcoal use. This traditional Japanese charcoal is made from the Japanese Ubame oak. The charcoal is only produced in south-western Japan. Locals here make the charcoal by hand in large clay kilns. By then pulling the moisture out of the wood very slowly, an incredibly firm and strong charcoal is created. This charcoal burns much longer than any other charcoal. Because this charcoal burns for so long and retains heat well, it is wise to use it sparingly. It is a relatively expensive product, which is where we offer an affordable alternative.
