Origin of the Shichirin grill
The Shichirin grill was developed in the 18th century. Back then, it was not used as a grill, but as a heating appliance. Over time, it was discovered that this grill could not only serve as a heating appliance, but that you could also use it perfectly to prepare yakitori and other foods. Thus, the Konro Grill was born. This table grill is made of diatomaceous earth, a material that can withstand temperatures of up to 1,000 degrees and holds it very well. Because the grids of the grill are fixed just above the charcoal, the juice of the meat drips into the grill and evaporates very quickly. As the vapour thus soaks into the meat, you get a great smoky flavour to your meat.
Binchotan
The Shichirin grill is a special grill. That means you also need a special type of charcoal to use it properly: Binchotan charcoal. This charcoal is made from the Ubame oak. A tree that only grows in Japan. Binchotan charcoal is therefore only produced in the southwest of Japan. Here, locals make the charcoal by hand in large clay kilns. The moisture is then very slowly drawn out of the wood, making it extremely hard. As a result, the charcoal burns much longer than any other type of charcoal. As a result, the product is also a bit more expensive. We offer an affordable alternative, namely the white BestCharcoal Binchotan. This is a charcoal from Indonesia and it has almost the same properties as Japanese Binchotan.
