The special Konro grill
The Konro BBQ was developed in Japan in the 18th century. At first, the grates of the grill served as heating devices. Later, people discovered that the grates could not only serve as heaters but were also ideal for preparing Yakitori and other food. The Japanese Konro grill is made of diatomaceous earth. This material can withstand extreme heat and holds up extremely well. When using the Konro BBQ, you place the meat only a few centimetres above the charcoal. As a result, the juice of the meat drips down to the grill and evaporates quickly. This vapour then soaks into the meat and this gives a delicious smoky flavour to the meat.
Binchotan charcoal
When you start using the Japanese Konro grill, you need a special type of charcoal: Binchotan charcoal. This charcoal is made from the Japanese Ubame oak. This charcoal is only produced in the south-west of Japan. Local people here make the charcoal by hand in large clay kilns. The moisture is then very slowly drawn out of the wood, making it incredibly hard. This ensures that this sturdy charcoal burns much longer than any other charcoal. As the product is somewhat more expensive, we offer an affordable alternative: the white BestCharcoal Binchotan. This charcoal comes from Indonesia and has almost the same properties as the variant from Japan.
