What is a Binchotan grill?

The original Konro grill comes from Japan. In China, they (of course) try to recreate this grill but they never match the quality of the original, however. But what can you tell? The original Japanese Binchotan grill is 100% handmade from diatomaceous earth. This is a raw material from prehistoric earth layers. The clay made from it can withstand more than 1,000 degrees. Because you use binchotan charcoal in the Konro grill, you also reach ridiculously high temperatures, but the outside gets lukewarm at most. This makes the Konro the perfect table grill. Because the grates are placed a few centimetres above the charcoal, the juice of the meat drips down to the grill and evaporates at lightning speed. This vapour soaks into the meat, giving it a fantastic flavour. In addition, in the Konro grill you use binchotan charcoal, the most extraordinary charcoal in the world.

When you start working with the Konro Grill, you have Binchotan charcoal needed. This particular charcoal is made from the Japanese Ubame oak. Binchotan is only produced in the southwest of Japan and is made there by local people. This makes this charcoal extremely unique. The moisture is drawn out of the wood very slowly, making this charcoal incredibly firm and burning much longer than any other charcoal. As mentioned, Japanese Binchotan charcoal is very unique therefore also very expensive.
